The jars from my most recent venture into canning. We have fresh-canned tomatoes for a while!

So, life has been crazy. In addition to chopping off my hair (see previous post), TK and I have officially moved from Georgia to Arkansas.

For a bit of background, TK grew up in central Arkansas and moved to Georgia right before we got married. A couple months ago we were toying with the idea of moving to Arkansas for a few different reasons (cost of living, opportunities, TK’s side of the family) and decided to casually start looking for jobs just to see what was out there.

Next thing we knew, we had interviews, job offers and an affirmative decision to move our little family! We’ve been here a couple weeks now and things have been great. We both like our jobs and we have enjoyed reconnecting with some of our Arkansas friends.

We’re still getting adjusted, but things have been great so far. A lot of people acted skeptical when I told them I was moving to Arkansas, but I’ve found a lot about our area that I like. Plus, Kora has loved having a yard to play in! She has discovered

the joy of rolling in the mud. Crazy dog! She’s also learned a few new tricks. She’s growing up so fast!

I’ve learned some new things, too. My father-in-law and I canned some tomatoes when I got here. It was a lot of fun and I can’t wait to can more fresh food. I think we’re making jam next … mmm!

Locks of Love

I’ve been wanting to do Locks of Love for a long time and I finally just got the courage to do it. For the past few years I’ve had pretty long hair. I’ve gone through phases where I’ve cut it, but it hasn’t been above my shoulders in a long time. This is definitely the shortest it’s been in a loooong time and it has taken some getting used to!

But here’s the thing: My hair will grow back. And fast! But for a child who has a disease or is going through a treatment where his or her hair falls out, a wig could mean the world.

This is just one of the huge changes going on in my life right now. Later this week I’m going to give you a glimpse into TK and my new life in ….

Also, I got to use my mother-in-law’s cool Pampered Chef icing thing to decorate. That was cool and made the process so much fun!

January Reading Goal

goal 1In an effort to keep myself on track for my 2013 goals, I want to give you a quick update on my reading last month.

One of my goals for the year is to read at least two books each month. In January I finished the last two Harry Potter books and, in case anyone is confused, it was my first time reading them!

I know, I know; I’m a little late to the Harry Potter party. When the books first came out I was reading other things (I was working my way through all the Nancy Drew books then moved on to Anne of Green Gables) and then when I had a free reading moment I already felt a little behind. So, now that I’m a professional and have a little more time on my hands, I decided to pick these books up! I started the series in July and read the last two in January. It took me about three days to read the last book if that’s any indication of how much I liked it 🙂

There are some people out there who haven’t read the books and are thinking about it, so I’m not going to go into detail about them, but I did want to share some basic reflections. Continue reading

A simple update

Well, it’s a good thing I didn’t make blogging on a regular basis one of my goals for 2013! It’s been a CRAZY few weeks and I haven’t done too much worthy to share. So, in the spirit of blogging, I want to just give you a simple update on life.

  • Our lease is up soon so we’re looking/packing/freaking out a bit (well, that last one might just be me) about what’s coming up in the next couple months. At some point I want to get a small house we can make our own through all my Pinterest finds, but at this point we’re working on paying off our lovely school loans before we start thinking about buying a house. Maybe someday…
  • Kora is growing up so fast! She’s getting her last puppy shots in a couple weeks. We had a bad experience at one vet and found another that we love, so that’s fantastic! She discovered her bark the other day which was quite entertaining. Too too funny 🙂
  • My goals for the year are going well so far! I’ve read two books this month (working on a third) and I will be posting a review of the books I read at the end of every month. I have a crazy span of genre I like, so don’t be too shocked when you see it. We’re eating really healthy stuff recently, too. As far as running that 5K … I’ll get back to you on that.

Other than that life is just kinda rolling along. We’ve had a couple threats of “snow” here in Atlanta yet I have only seen one lone flurry on my commute today. Oh well.

Happy New Year!

TK and I spent New Year’s Eve evening with some friends playing games and eating an array of delicious food. Good start? Yes, I’d say so. Unfortunately, yesterday was not a joyous start of 2013 after I had to take sweet little Kora to the emergency vet after her (soon to be former) vet overloaded her on unnecessary vaccines (Side Note: I highly suggest avoiding Banfield Vet Hospitals).

Now that Kora’s back to normal and life has continued moving with 2013, I guess it’s time to make some goals. I always hesitate making “resolutions” because I tend to be too legalistic with such things and then fall flat on my face when I make unrealistic expectations. A few years ago I did make it a goal to cut out all soda products and I have kept that one for a while now (I may have had a ginger ale on a plane trip this year, but that’s pretty much it).

This year I am going to make a few realistic goals that I can keep up with throughout the year. Then, in about 363 days I’ll look back and see how I did!

Cornish hens with rice stuffing – Christmas Eve with the Spencers

Like I said earlier this week, TK and I had a great first Christmas together. We had dinner on Christmas day with my parents, so I cooked a fancy meal for the two of us on Christmas Eve. I got the recipe for my hens with rice stuffing from this website, but I changed it quite a bit for my taste. We also had roasted okra which was a big hit. Yay veggies! Continue reading
